The technique of "Ikejime" performed by 23 selected masters, "Gotojime".

Among the "ikejime" that is applied to the fish in order to maintain the freshness of the fish, there is a method of ikejime that is devised like no other so that the freshness lasts for an even longer time. 

Because remote islands take longer to transport, they must be processed with ikejime, which allow the fish to maintain freshness for longer periods of time. That's where goto-jime was born. 

 

The "Goto-jime Study Group" consists of more than 20 skilled fishermen, who have mastered "Goto-jime" and study effective Ikejime techniques every day to improve the freshness of the fish for shipment. It is an organization where administration and fishermen work together to research ikejime, which is a rarity in Japan. 

 

They work with Professor Tachibana of Nagasaki University to analyze the data in the best way to delay the rigidness of the fish after death and also increase the umami component. They utilize this data to continuously improve their methods.

Goto-jime is performed by a small number of fishermen who pass practical skills and written tests held once a year. They are called “Takumi”, and only 21 people currently have this prestigious title.

"Goto-jime" is when the fishermen perform Ikejime on carefully selected fresh fish while still on the boat. This requires a special set of skills, which are rare even in Japan. When Goto-jime fish were sent to the U.S., they had a track record of maintaining the freshness and deliciousness of the fish.
